Polly has admitted a new love affair, hooking up with with Chee-Boh!
‘But who’s Chee-Boh?’ We hear you ask! Chee-Boh (Cibo – Italian word for Food – pronounced ‘Chee-Boh’), is the group of talented chefs who have taken Polly’s true heart – her kitchen.
Chee-Boh Executive Chef Matthew Time has created a unique menu for Polly that stays true to Polly’s roots and Mediterranean influences, and not only complements the cocktail menu, but also reflects their much loved space.
Polly is an inner north favourite, and has been a mainstay of the local drinking community for over 18 years, most recently winning Time Out’s People’s Choice Award. As one of the oldest cocktail venues in Melbourne, Polly is rightly regarded as one of the jewels in the crown of Brunswick Street, and certainly an Inner Circle favourite.
With items such as sticky fried lamb ribs with honey, salted rosemary brittle and lemon, or the potato croquette sandwich with caccio cavalo, capponata, and lemon on ciabatta, the menu carries on the playful traditions that have always been found on Polly’s cocktail menu.
Matthew Tine, Executive Chef, spent 11 years at Grossi Florentino, arguably Melbourne’s most iconic Italian restaurant, where he developed and honed his culinary skills, before launching his own successful restaurant Mr. Ottorino’s. Matthew is looking forward to the challenge of developing Polly’s standing as an eatery, to match her renowned cocktail reputation.
